What is the history behind modern definitions of beauty in the west?

I’m doing a project on cultural definitions of beauty and I can’t find anywhere where the whole tall, light hair, light eyes, definition of beauty held in our western culture comes from.
Answers are appreciated, but links to sites are even more appreciated!!
